Not as much as you’d think, unless you are eating an industrial loaf.  Our ‘Pain de Campagne’, which literally means “bread of the countryside” or ‘Pain Levain’ is made with a sourdough starter with whole grain wheat and rye flours added in varying proportions (to a strict and closely guarded secret), providing an unmistakeable earthy, fresh-milled grain taste and aroma to our loaves.
